White Beans on a Bed of Greens -- Kathie Madonna Swift

Enjoy this delicious Swift & Simple Salad to green up and bean up your day! It's loaded with flavor, fiber and a fabulous nutrient profile -- and best yet, it takes just a few minutes to prepare. Feel free to toss in "add ons" such as kalamata olives, cherry tomatoes or fresh strawberries -- whatever suits your fancy!

Prep Time:  10 minutes

Makes: 2 Servings
1 cup BPA-free canned beans
1 ½  tablespoons freshly squeezed lemon juice
¼  cup chopped flat-leaf parsley
½  clove garlic, pressed
1 tablespoons extra virgin olive oil
Pinch sea salt
Dash red pepper flakes (optional)
2 cups fresh greens (spinach, arugula, or mesclun greens)
In a medium bowl, mix the beans with the lemon juice, parsley, garlic, oil, salt and pepper flakes. Place the greens on a plate and top with the white bean mixture.
Swift Tip: My favorite kitchen gadget is my turquoise “citrus squeezer” for extracting the juice from lemons and limes. And I am a minimalist gadgeteer, but I couldn’t live without this inexpensive, time-saver!
